Aptly named El Limon: this coffee excels in its range of citrus expression. At its best, we get this lively Key Lime Pie quality paired with a luxurious mountain honey-like sweetness and depth. A clean, and incredibly balanced lot that showcases the potential of the Caturra variety. 

El Limon is the nickname of a specific lot of Caturra trees that is carefully maintained by coffee producer Ilde Burbano. Ilde cultivates many incredible varieties: Pink Bourbon, Pacamara, and Gesha to name a few.

This special lot comes from purebred Caturra trees, which are kept separate from other varieties. Ripe cherries are picked, pulped, and left to wet-ferment for 24 hours. They are then dried in parabolic driers for a period of 18-24 days.

Don Ilde is a big proponent of regenerative agriculture. He dedicates roughly 35% of his farm to preserving the natural "wilderness" of the forest. He believes that this intentional preservation is what brings life and success to his coffee crops.

All our roasted coffees are run through an AI-powered optical sorter. This extra step ensures that you receive only the most nutrient-dense, flavorful coffees from each lot. The machine is also capable of removing any foreign objects (corn, metals, rope, to name a few) from the rest of the coffees.

The higher the percentage, the more coffee is being removed in order to achieve a truly pristine product. We liken this to how sake-makers "polish" during production in order to reach a higher-quality product.

Nothing goes to waste: the rejected coffees are re-roasted and sold to local markets.
