How could you not be intrigued by the name "starmaya"? We cupped this blind and found that the coffee had a lot of earth spice, amaretto and cascara-like fruity flavors. A unique coffee with an even more unique name!

Oscar and Francisca Chacón are third-generation coffee producers, but the coffee is more than just in their family heritage: It's in their hearts and souls as well. The couple is committed to quality and innovation, and are among the very first farmers in Costa Rica to produce Honey and Natural process specialty coffee.

All our roasted coffees are run through an AI-powered optical sorter. This extra step ensures that you receive only the most nutrient-dense, flavorful coffees from each lot. The machine is also capable of removing any foreign objects (corn, metals, rope, to name a few) from the rest of the coffees.

The higher the percentage, the more coffee is being removed in order to achieve a truly pristine product. We liken this to how sake-makers "polish" during production in order to reach a higher-quality product.

Nothing goes to waste: the rejected coffees are re-roasted and sold to local markets.

Variety / Cultivar

Starmaya

Starmaya is an F1 hybrid that was derived from Marsellesa and an Ethiopian landrace. Created in Nicaragua, this variety has been released by ECOM and is now being adopted by producers in other countries. Starmaya is highly resistant to rust and has high yield potential.
