Halo Beriti Washing Station was established in 2014 and serves 750 smallholder producers, who deliver their coffee in cherry form. This particular lot is part of a "special preparation" in which hand-sorting was done repeatedly throughout the receiving and drying process, ensuring that only perfect coffees made it into the bags. Warm tropical climates with moderate wet and dry seasons in Yirgacheffe creates thick vegetation, so much of the coffee produced is shade-grown by small producers using organic practices. Coffees are cultivated from 1600 to 2400 masl in these highlands.

This lot from Halo Beriti is a beautiful Ethiopian Heirloom standard - we taste crisp, smooth honeydew, bright and sweet key lime pie, with a pleasantly lingering creamy mouthfeel.

All our roasted coffees are run through an AI-powered optical sorter. This extra step ensures that you receive only the most nutrient-dense, flavorful coffees from each lot. The machine is also capable of removing any foreign objects (corn, metals, rope, to name a few) from the rest of the coffees.

The higher the percentage, the more coffee is being removed in order to achieve a truly pristine product. We liken this to how sake-makers "polish" during production in order to reach a higher-quality product.

Nothing goes to waste: the rejected coffees are re-roasted and sold to local markets.
