El Triunfo

size:
Sale price$26.50 USD
Finca El Triunfo is located in Palermo, Huila, Colombia, and is managed by Audon Solano, a second-generation coffee grower. The farm consists of 26 hectares of land, with 3 hectares currently dedicated to growing coffee. It sits at an elevation of 1,800 m.a.s.l, with around 15,000 coffee trees in production, of the Caturra, Colombia, Tabi, and Pink Bourbon varieties. Audon works with a unique fermentation recipe: 24/36 hours, meaning the coffee is first fermented in cherry for 24 hours and then de-pulped and dry fermented in the tank for an additional 36 hours. Upon washing, the coffee is laid out to dry in a greenhouse-style structure, for approximately 12-18 days depending on the climate.
The extended fermentation period on this coffee adds a playfully winey yet balanced body, with extra depth akin to sherry wine and grape jam. It is bursting with lychee, grape, and ripe peach flavors. This coffee beautifully strikes the balance between winey and clean.

Sorting Level

4-5%

All our roasted coffees are run through an AI-powered optical sorter. This extra step ensures that you receive only the most nutrient-dense, flavorful coffees from each lot. The machine is also capable of removing any foreign objects (corn, metals, rope, to name a few) from the rest of the coffees.

The higher the percentage, the more coffee is being removed in order to achieve a truly pristine product. We liken this to how sake-makers "polish" during production in order to reach a higher-quality product.

Nothing goes to waste: the rejected coffees are re-roasted and sold to local markets.

Variety / Cultivar

Pink Bourbon

Despite it's name, Pink Bourbon is closer to Ethiopian Landrace variety than it is to Red or Yellow Bourbon. A constant favorite on the cupping table at Regalia HQ: we get the greatest range of florality and sweetness in the best of Pink Bourbons.
