El Higeurón

Size:
Sale price$22.00 USD

Fabiola Ortega and her husband Julio Muñoz run El Higueron, a farm near San Agustín, Huila, that has been in Julio's family for three generations. Before committing fully to coffee, the couple tried their hands at other work — lulo, tomatoes, cattle, even transport — but returning to the farm together brought them more purpose than anything else. Over time they moved from cultivating traditional varietals and processes toward specialty production, now growing exotic varieties like Pink Bourbon, Gesha, Tabi, and this Sidra alongside their traditional trees.

This coffee is a beautiful juxtaposition of refreshingly crisp and syrupy sweet. In the cup, we taste intense malic acid paired with a smooth buttery mouthfeel, like biting into a juicy caramel apple. It is crisp like a watermelon refresher, with the bright and syrupy body of pomegranate molasses.

Sorting Level

3-5%

All our roasted coffees are run through an AI-powered optical sorter. This extra step ensures that you receive only the most nutrient-dense, flavorful coffees from each lot. The machine is also capable of removing any foreign objects (corn, metals, rope, to name a few) from the rest of the coffees.

The higher the percentage, the more coffee is being removed in order to achieve a truly pristine product. We liken this to how sake-makers "polish" during production in order to reach a higher-quality product.

Nothing goes to waste: the rejected coffees are re-roasted and sold to local markets.

Variety / Cultivar

Sidra

Originally native to Ecuador: Sidra is a cross-breed of Bourbon/Typica and a Nestle hybrid.
