
Color Sorting Set
Each batch we roast goes through color sorting after roasting, which removes lighter-colored beans, underripe beans ("quakers"), and other defects. After the first roast of a new coffee, we cup blind samples sorted at different intensities—including an unsorted sample—to determine the best sorting profile for that coffee.
Our median sorting percentage across 2025 was 4.78%. For Goro Site, however, our cupping QC process led us to choose a much higher sorting percentage of 20%. This coffee benefited noticeably from the extra sorting: its peach, apricot, and floral notes came through more clearly, the cup was sweeter, and the finish was free of any harsh, nutty flavors.
This kit includes a rested sample of the sorted final product alongside a sample of the original unsorted coffee. Both were roasted on 8/4 to allow for rest and are ready to drink immediately. We recommend cupping and brewing them side-by-side to best learn the differences that color sorting makes.
