Our second release from Guji comes from the Shakiso region, representing a beautiful expression of the area’s terroir and meticulous processing from Biru Bekele washing station. Equipped with modern eco-pulpers and a multi-channel fermentation system, Biru Bekele produces exceptionally clean coffees with great precision.
After hand-picking at peak ripeness, cherries are depulped within six hours of harvest and fermented for 24-36 hours. The beans are then fully washed through the station’s three separate channels to fully remove any mucilage. Finally, the beans are moved to raised drying beds where they dry for 10-14 days.
This cup is bursting with classic qualities of Ethiopian coffees: watermelon hard candy, fresh lime brightness, and an intriguing herbal, lemongrass-like quality.
