

Finca Cataluña
Finca Cataluña is located in Pitalito, Huila, Colombia and is managed by Flor Marina Betancourt and her family. On the 6.5 hectare farm, they cultivate Pink Bourbon, Cenicafe, and Castillo. Coffee is processed by first fermenting the ripe cherries on the processing hopper for about 12 hours, then removing the pulp and fermenting for 40 hours. Then, coffee is dried in a greenhouse with air circulation for between 8 and 12 days, depending on the weather.
The care and attention to detail shines through in this clean and juicy cup. We taste berry compote, playful and bubbly grapefruit mimosa, and a smooth lemon tea-like structure.

All our roasted coffees are run through an AI-powered optical sorter. This extra step ensures that you receive only the most nutrient-dense, flavorful coffees from each lot. The machine is also capable of removing any foreign objects (corn, metals, rope, to name a few) from the rest of the coffees.
The higher the percentage, the more coffee is being removed in order to achieve a truly pristine product. We liken this to how sake-makers "polish" during production in order to reach a higher-quality product.
Nothing goes to waste: the rejected coffees are re-roasted and sold to local markets.

Variety / Cultivar
Pink Bourbon
Despite it's name, Pink Bourbon is closer to Ethiopian Landrace variety than it is to Red or Yellow Bourbon. A constant favorite on the cupping table at Regalia HQ: we get the greatest range of florality and sweetness in the best of Pink Bourbons.
