Ibisi Site

Size:
Sale price$22.00 USD
If you were a fan of last year's Nyungwe Site, this lot is even better. Intense Lime zest and cane sugar dominate the initial sip, with some vanilla and pastry lingering in the back. This lot arrived remarkably fresh: I urge you to try it as soon as you can.

Ibisi Mountain Hills washing station is located in the hills of Southern Rwanda, just a short drive from the Nyungwe Forest, which has been traced as the source of the Nile River.

Bernard Uwitije, a native of the area, had been trading non-washed Ordinary coffee up until 2015, when he realized the potential for fully washed specialty grade coffee. He build his first washing station, Gitega hills, which operated successfully in his first year and he decided to expand the operations by building a second washing station,
ibisi and the quality at both stations remain outstanding.

Sorting Level

9-10%

All our roasted coffees are run through an AI-powered optical sorter. This extra step ensures that you receive only the most nutrient-dense, flavorful coffees from each lot. The machine is also capable of removing any foreign objects (corn, metals, rope, to name a few) from the rest of the coffees.

The higher the percentage, the more coffee is being removed in order to achieve a truly pristine product. We liken this to how sake-makers "polish" during production in order to reach a higher-quality product.

Nothing goes to waste: the rejected coffees are re-roasted and sold to local markets.

Variety / Cultivar

Red Bourbon

A naturally occurring Typica-mutation: Bourbon coffees are recognized across the world as a standard for high-grade arabica coffee. At it's best, we find that Rwandan Red Bourbon is incredibly sweet, crisp, and balanced in its expression.
