This limited edition lot from Abel Salinas is incredibly clean and orangey. The varietal's character really dominates the cup profile: peachy, soft florals, and citrus zest.

Finca Arashi is located in Saraguro, Loja, Ecuador, and is managed by Abel Salinas, a 58-year-old, first-generation coffee grower and fifth out of twelve siblings. The farm sits at an elevation of 1,890 MASL and consists of 7 hectares of land. His land holds about 22,000 coffee trees in production, the majority of the which being the exotic Typica Mejorado. Abel starts by de-pulping and then dry-fermenting the coffee for 24 hours. After washing the coffee, he dries it for 15 days in a greenhouse structure. The lot is dried with constant movement to ensure an even drying process until it reaches 10% moisture.

All our roasted coffees are run through an AI-powered optical sorter. This extra step ensures that you receive only the most nutrient-dense, flavorful coffees from each lot. The machine is also capable of removing any foreign objects (corn, metals, rope, to name a few) from the rest of the coffees.

The higher the percentage, the more coffee is being removed in order to achieve a truly pristine product. We liken this to how sake-makers "polish" during production in order to reach a higher-quality product.

Nothing goes to waste: the rejected coffees are re-roasted and sold to local markets.

Synonymous with quality in Ecuador: Typica Mejorado is thought to have stemmed from F1 Hybrids. A potential cross of Bourbon and Ethiopian landrace: the best TM's are fragrant and deliciously silky in texture.
