Gildardo Lopez Pink Bourbon

Gildardo Hopez returns to the menu with his illustrious Pink Bourbon.  This lot will be one of two pink bourbons that will luckily grace our menu this year.  His farm is located in Paicol, in western Huila.  

The cherries are harvested when ripe, and then floated through water canals.  After post-sorting, they wet-ferment for 30 hours prior to de-pulping.  Once de-pulped these are then fermented again for another 48 hours.  The parchment is then dried on raised beds for 20-25 days.
