Jose Burbano Muñoz is a second generation coffee grower, having inherited the land and his techniques from his mother. Her instruction to producing high quality coffee resulted in the emphasis on care in each step of production: from seeding, to cherry collecting, to fermentation, and finally drying and storage.
After the ripe cherries are selected, they are sent to be wet-fermented for 12 hours in cherry. After depulping, they are then fermented for an additional 30 hours in tanks. These are dried for 16-21 days on covered canopy beds.
