Notes from Paolo:

A standard charge range for this coffee helps it retain some of the more delicate nuances in flavor. Santa Barbara has really come forward in quality and processing, and it certainly shows during the roast. The coffee likes to take on a little too much heat (for my comfort) around first crack, but it usually lands quite gracefully on its feet afterwards.
