It is worth noting that this was her first time entering the COE.
Silvia's coop Ejido San Fernando is based in Chiapas, Mexico. The coffee is certified Fairtrade and organic. The drying processed was monitored and controlled via BRIX% readings, and dried on raised beds to control the ambient temperature and evenness of drying.
